Kasoori methi are a special variety of dried fenugreek leaves. Unlike some herbs, the flavour in these leaves develops through drying and matures with age, taking on a subtle smokiness as well as rich, intense notes of maple and soothing anise. Kasoori methi rehydrate in liquids and sauces, swelling and blossoming with flavour. Many curries simply aren’t complete without their complex, sophisticated fragrance.
